Los Angeles–Filipino-American jazz singer Charmaine Clamor’s newly released CD, My Harana: A Filipino Serenade, is most likely heading for the charts, says JazzWeek, which had Clamor’s previous CD Flippin’ Out in its World Music and Jazz charts.

Clamor is known for introducing jazzipino, a hybrid of American jazz with Filipino melodies, to mainstream listeners.

This recipe is “familiar yet different,” says Chef Rob. An easy-to-cook recipe that anybody can whip up in a flash, this onion fritters recipe  (topmost in this photo) is great for breakfast.

For the fritters
4 tbsp olive oil
1/2 white onion, sliced thinly
1/2 red onion, sliced thinly
2 tbsp green onion, sliced thinly
1/4 cup goat’s cheese
3/4 cup pancake mix
1 egg
1/2 to 1 1/2 cup water

Preparation:
1. Place the oil and red and white onions in a pan. Saute until translucent and set aside to cool.
2. Combine the goat cheese, pancake mix, egg, green onions, and water to make batter. Once done, add the cooled red and white onions.
3. Dip a napkin in olive oil and wipe it on the nonstick pan. When the pan is hot, place 2 tbsp of the fritters to make little pancakes. Cook until golden brown. [Read more]

People who know me very well know that I’ve always wanted to be a chef. Had I not discovered writing in high school, I’d probably be quite at home in the kitchen. So you can just imagine how delighted and excited I was to participate in a cookoff, a la Iron Chef, with breast cancer warriors and Chef Rob Pengson of the GMA cooking show Chef to Go supervising the kitchen.

For the challenge, Chef Rob had come up with two recipes–salad of smoked salmon and onion fritters with honey-mustard vinaigrette and chicken and mushroom pasta–that each team had to prepare in one hour. These were both easy to prepare and contained healthful ingredients that reduced the risk of cancer. [Read more]
