From Chef Nouel Omamalin, here’s the fourth of a series of recipes you can try out for Christmas and New Year’s. Have some holiday recipes and stories to share? Send them to pinoycentric@gmail.com.

Ingredients
320g butter, melted
450g egg
175g egg yolk
320g sugar
215g cake flour
5g baking powder
25g cocoa powder
320g dark chocolate, melted
225g candied cherries

Procedures
1. Preheat oven to 200C.
2. Prepare four standard-size loaf pans.
3. Mix the melted butter, eggs, egg yolk, and sugar. Set aside.
4. Sift together the flour, cocoa powder, and baking powder.
5. Slowly add the butter-egg mixture into the flour mixture.
6. Stir in the melted chocolate and the candied cherries.
7. Bake for 10 minutes.
8. Immediately take out of oven and make a lengthwise incision about a half-inch deep.
9. Return the cake to the oven and lower heat to 165C.
10. Bake for another 30 to 45 minutes or until done.
11. Sprinkle with icing sugar before serving and decorate with green and red cherries on top for a festive finish.
